Well, I guess it's not really a recipe (would anyone really need a recipe to make a chicken sandwich?). One of our favorite ways to use leftover roast chicken is to make sandwiches with olive bread ,a little bit of spicy brown mustard, and some radish sprouts.

Alternatively, you can use cranberry-walnut bread, with lettuce and honey mustard.
